Beef and Vegetable lasagne

Ingredients:

Bolognaise Sauce

  • 500g extra-lean beef mince

  • 3 cloves garlic - minced

  • 1 large zucchini (courgette) - grated

  • 2 cups baby spinach

  • 500g low-carb pasta sauce

  • 4 scoops Tric Unflavoured collagen powder

White Sauce

  • 100g Carbonara sauce (ready-made)

  • 1 cup cottage cheese

  • 1/4 cup parmesan cheese (grated)

Other

  • 6 low-carb wraps

  • 1 cup spinach

  • 2 cups low-fat tasty cheese (e.g. Noble)

Directions:

Brown beef mince on medium heat, add garlic, zucchini and baby spinach. Simmer for 5 min on low heat. Add pasta sauce and unflavoured collagen protein powder. Simmer for further 5 min.

Blend together white sauce ingredients.

Assemble in lasagne dish as follows:

  • base layer of mince and vegetable (bolognaise) mix

  • layer of white sauce

  • fresh spinach leaves

  • layer of low carb wraps

    Add second layer of bolognaise, then white sauce, finishing with grated cheese on top.
    Place in oven and cook for 30-40 min on 180 degrees.
