This is one of our favorite recipes from the FOHL Retreat. If you want to make it vegetarian, just remove the bacon. This is ideal to make and cut up into bariatric portions and pop into the freezer to have available at short notice, or to take for lunch. It's seriously delish :)

Curried Shepherd's Pie
We have taken one of the original Shepherd’s Pie recipes from Create, Savour, Enjoy (our first cookbook) and added some curry ingredients to spice it up a bit for Winter.
Asparagus, Kumara, Walnut and Parmesan Salad
Preheat oven to 2oo•c. Line an oven tray with baking paper. Toss kumara with a good drizzle of olive oil on prepared tray, season with salt and pepper, and roast for about 30 minutes or until golden and tender.
Sweet and Spicy Korean Chicken
In a bowl, mix honey, gochujang, soy sauce, sesame oil, ginger, and garlic. Marinate chicken thighs in mix for 2-24 hours in the refrigerator. Note: If you don’t have time to marinate the chicken, just pour over chicken after you add to the baking dish.
Chicken Satay
Fry onion, garlic and chicken pieces in a frying pan with olive oil. Add rest of ingredients to pan, simmer for 15 minutes.
Mexican Quesadilla Stacks
Heat oil in a medium saucepan on medium heat. Add chopped onion and garlic and cook for 2 minutes. Add mince and cook until the mince is brown, stirring all the time.
