Roasted Turmeric Cauliflower with Avocado Salsa

This roasted turmeric cauliflower is a quick and easy nutritious side for vegetarians and carnivores alike. It's also a great substitute for carbohydrates and goes well with any main protein. Enjoy :)
Serves: 2

Ingredients

500 g cauliflower, chopped
1/2 cup avocado, chopped
1 cup spinach leaves, chopped
1 cup cucumber, diced
1 tbsp. dried coriander
1/3 cup red onion, chopped
2 tomatoes, chopped
1 lime, freshly squeezed
1 1/2 tbsp. olive oil
1/3 cup goats cheese
1 tbsp. turmeric powder
Himalayan salt and pepper

Method

  1. Pre-heat oven to 180 degrees and line a baking tray with baking paper. Place cauliflower on the tray and sprinkle the turmeric over the cauliflower. Bake in the oven for 20 minutes or until golden brown on the top

  2. To make the avocado salsa, combine the spinach, avocado, cucumber, coriander, goats cheese, onion and tomato in a bowl

  3. Drizzle the olive oil and lime juice over the salad and mix well

  4. Divide the roasted cauliflower into two serves. Dish one serving in a bowl and pour half of the avocado salsa over the top

  5. Refrigerate the second meal for tomorrow's leftover
