Overnight Weet-bix Cheesecake

Ingredients:

BASE LAYER

1 Weet-Bix

1/4 C Calci-Trim milk

CHEESECAKE LAYER

160g vanilla protein yogurt

2 Tbsp cottage cheese

1 serve Tric Unflavoured Collagen Powder

BERRY LAYER

1/4 C frozen raspberries

1 tsp chia seeds

Directions: 

  1. Crumble Weet-Bix into a ramekin or small bowl. Pour over the milk.

  2. Combine ingredients for the cheesecake layer in a small food processor and blend until smooth. Alternatively, add to a small bowl and mix well with a fork until a smooth consistency is formed. Layer on top of the Weet-Bix.

  3. Add raspberries to a small microwave proof bowl and heat for 30 seconds. Mash with a fork and stir through chia seeds.

  4. Carefully spread the mashed berries over the cheesecake layer. Cover and refrigerate overnight. Will store for up to 3 days.
