Kumara, Bacon & zucchini bake

Ingredients:

·      12 eggs, whisked

·      2 cups grated kumara (raw)

·      200 g thinly sliced, crispy bacon

·      3 grated zucchini (water partially squeezed out)

·      6 brown onions, caramelised (in balsamic vinegar and honey)

·      6 sundried tomatoes, sliced thinly

·      4 cloves garlic, crushed

·      3 teaspoons baking powder

·      500 g ricotta cheese

·      1 cup almond meal

·      6 tablespoons chopped parsley

·      6 tablespoons chopped fresh chives

·      Optional ; half cup grated cheese (mozzarella, parmesan, tasty mix)

 

Preparation:

1.      Preheat oven to 180° C and brush/spray a 30 cm long baking dish with oil

2.      Caramelise onions – slice onions and shallow fry in pan with 2 tsp oil, 3 tbsp balsamic vinegar and 4 tsp honey. Cook until soft, stirring often.  Leave to cool slightly.

3.      Gently combine all ingredients (including onions) in a bowl and then transfer to baking dish.

4.      Bake for 60 minutes or until cooked (when skewer comes out clean…sometimes up to 120 min) and then rest for a few minutes before serving.

5.      Optional : add some grated cheese to top of Bake 10 minutes before end of cooking time, grill until golden. Top with tomato relish and add seasonal vegetables like asparagus as preferred.
