Karen's BBQ Blueberry Sauce

The first ingredient in this delicious sauce is bacon, and that should tell you everything you need to know. Serve it warm over barbequed meat like chicken or with pulled pork. It is also a little decadent over cheesy eggs.

Ingredients

2 rashers lean shoulder bacon, diced 
½ cup onions; diced 
½ 410g can tomato puree 
2 ½ cups fresh blueberries 
¼ cup tamari 
1 tbsp Dijon mustard 
2 tbsp lemon juice 
1 tsp liquid stevia 
½ teaspoon garlic powder 
½ teaspoon salt

Method

  1. Fry the bacon in a medium saucepan over medium heat until slightly crispy; remove bacon to a paper towel.

  2. Add onions to the pan and saute over medium heat until soft for about 2-3 minutes. Add the blueberries, tomato sauce, tamari, lemon juice, Dijon mustard, garlic powder, salt, and cooked bacon.

  3. Simmer until the blueberries have split and the sauce begins to thicken (about 8-10 minutes). Transfer the mixture to a blender, add the sweetener and blend until smooth. Pour into the pan to keep warm.
