We have taken one of the original Shepherd’s Pie recipes from Create, Savour, Enjoy (our first cookbook) and added some curry ingredients to spice it up a bit for Winter.
Preheat oven to 2oo•c. Line an oven tray with baking paper. Toss kumara with a good drizzle of olive oil on prepared tray, season with salt and pepper, and roast for about 30 minutes or until golden and tender.
In a bowl, mix honey, gochujang, soy sauce, sesame oil, ginger, and garlic. Marinate chicken thighs in mix for 2-24 hours in the refrigerator. Note: If you don’t have time to marinate the chicken, just pour over chicken after you add to the baking dish.
Fry onion, garlic and chicken pieces in a frying pan with olive oil. Add rest of ingredients to pan, simmer for 15 minutes.
Heat oil in a medium saucepan on medium heat. Add chopped onion and garlic and cook for 2 minutes. Add mince and cook until the mince is brown, stirring all the time.
